Quick dinner meal

I love to eat, but I don’t like to cook.  I do it because I like to eat, but if the recipe is too complicated or takes too long – I’ll find something else to eat.  This is a little recipe that seriously takes about 30 minutes to prep, cook, and be ready to sit down to eat.  For starters, I usually make a big bowl of quinoa on Sundays. This way, I can add it to anything during the week.  That being said, keep in mind that my quinoa is already cooked.

INGREDIENTS

2 organic chicken breasts

1/4 cup organic cranberrieschxn cranberry EDITED

1 cup organic baby carrots

1/2 cup chopped organic sweet onions

1/4 cup cooked quinoa

2 T coconut oil

 

DIRECTIONS

Put everything in one pan. Cover and let it steam/simmer to cook. Stir it often to make sure the chicken cooks all the way through. Once everything is cooked, season to taste and serve on your plate. It’s simple and yummy!!
